In 1976, the Rica Pasteurizing Plant was the one who started the mass production of aged cheeses with pasteurized milk on an industrial scale in the Dominican Republic. The Rica cheeses are produced with pasteurized milk, culture of lactic bacteria and coagulating enzymes, which allow the coagulation and separation of the milk solids from the liquid part. Currently Rica produces fresh cheeses, of smooth flavor and highly moist content, which can be consumed immediately after being crafted. It also produces matured cheeses of strong aroma and flavor and firm consistency, and processed cheeses, which are the result of the mixture of several types of the original ones. Rica Pasteurizing Plant has a line of cheeses elaborated through a production process in which no chemical preservatives are added, and whose quality allows it to compete with international brands. Rica makes its butter from the milk cream which is a result of the same cream extraction process used to obtain the several milks with the different percentages of fat desired. The butter production process is continuous. The cream is pasteurized and later it goes through different equipment where the sweep of the cream and the mixing give the result of a fat paste with retained moisture. This is mixed again during the process until butter with the characteristic moisture and softness required is obtained.
