This January, Santiago Peralta was recognized as Outstanding Chocolate Maker of 2013 by the Fine Chocolate Industry Association at the organization’s winter event in San Francisco. This award is given every other year to select professionals and companies for their significant contributionto the chocolate industry. It is the first time that this honor has been awarded to a Latin American chocolate maker. Having joined the ranks of the best chocolates in the world, Pacari has revolutionized the industry in both Ecuador and Latin America by creating a transparent model of tree to bar manufacturing based on innovation, ecological and social responsibility, and direct trade with certified organic farms throughout the country. Peralta spends much of his time in the field sourcing cacaos from genetically diverse old farms that capture the full range of flavor and aroma of the best cacao regions of Ecuador; the largest producer of fine cacao in the world. Paying higher prices for quality certified organic cacao, Peralta and his company benefit more than 3,000 farming families. Pacari is the leader of the Raw chocolate movement and the only chocolate company in the world working with biodynamic cacao. But Peralta is also using exciting South American ingredients in his flavored bars like forgotten Andean fruits such as goldenberries (Physalis -peruviana) and wild mortiñosas well as traditional flavorings from neighboring countries such as Chilean merkén (a spice mix from the Mapuche Indians of Chilean Patagonia) and Maras pink salt from ancient salt works near Cuzco. In the process of developing these flavors, Pacari has created new models of sustainable organic agriculture that primarily benefit women from impoverished farming communities in the Ecuadorian highlands. For instance, goldenberries, once a marginal Andean crop, are now cultivated successfully by more than 100 Quechua-speaking women who are part of a cooperative that also dries the berries to be used in some Pacari products. Pacari chocolates are processed to preserve the purity of flavor of the regional cacaos from Ecuador. It is also the only company in the world to have obtained the prestigious Demeter Biodynamic Certification, the ultimate recognition of sustainability. “Learning about the rhythms of nature and how to improve the health and productivity of a farm with a holistic approach has been rewarding. “Biodynamic farming is a natural extension of the sustainable and fair-trade practices already upheld by Pacari,” said Peralta.
