Naturally, that begs the question. Why would we ship our precious beans 8000 miles away? The answer is simple. The best coffee roasters in the world are in the beautiful city of Pamplona, in northern Spain. Beginning in 1934, the Moreno family has made coffee roasting an art form. Early experiments in roasting led to the development of “Visual Roasting”, a technique where a highly trained artisan actually observes the roasting process from start to finish. He then, at exact moment when the fumes reach the precise color, about 20 to 25 minutes, quickly interrupts the roasting process. The beans are quickly cooled by refrigeration and immediately packaged. Le Mont then seals and air ships the beans around the world. It common for the beans to go from oven to airport in two hours. Why is this timing process so important? In a word, quality! While unroasted beans keep their quality for a long time, every day that passes after roasting weakens the flavor and aroma by a tiny amount. After one or two months, the coffee would no longer be Le Mont quality. So, time is the enemy of the best. Unlike fine vintages of wine that improve with age, coffee does quite the opposite. Most roasted coffee beans sold in the world today can be as old as one year and still be marketed as “fresh”.
