From the pristine mountains of southern Brazil, comes a coffee like no other; Le Mont. Hidden in the hills of south Minas, Brazil’s #1 coffee growing region, is a unique microclimate that is absolute perfection for growing coffee. Free from the pollution of the cities, the coffee plants flourish in the 2000 ft elevation, warmed by 300 days per year of sun and nourished by the gentle rains. This is anything but mass production. The farms are small, only a few hectares. The plants are cared for by hand, each receiving the nourishment and careful pruning that leaves only a handful of beans per plant. But the result is coffee flavor and aroma unparalleled in all the world. One taste of this coffee will spoil you forever. In fact the true coffee afficianados compare the Le Mont aroma to an elegant perfume, intoxicating, complex and yet subtle. After your fist time you will instantly recognize the unique Le Mont aroma. The careful farming and unique climate are only part of the story. After the harvest, only the best beans are chosen by hand, and then carefully packed for shipment. Where you ask? Spain! Naturally, that begs the question. Why would we ship our precious beans 8000 miles away? The answer is simple. The best coffee roasters in the world are in the beautiful city of Pamplona, in northern Spain. Beginning in 1934, the Moreno family has made coffee roasting an art form. Early experiments in roasting led to the development of “Visual Roasting”, a technique where a highly trained artisan actually observes the roasting process from start to finish. He then, at exact moment when the fumes reach the precise color, about 20 to 25 minutes, quickly interrupts the roasting process. The beans are quickly cooled by refrigeration and immediately packaged. Le Mont then seals and air ships the beans around the world. It common for the beans to go from oven to airport in two hours. Why is this timing process so important? In a word, quality! While unroasted beans keep their quality for a long time, every day that passes after roasting weakens the flavor and aroma by a tiny amount. After one or two months, the coffee would no longer be Le Mont quality. So, time is the enemy of the best. Unlike fine vintages of wine that improve with age, coffee does quite the opposite. Most roasted coffee beans sold in the world today can be as old as one year and still be marketed as “fresh”. At Le Mont we spare no expense to choose the ultimate fruit, pick by hand and ship across the ocean for the very best coffee beans that the world has to offer.
