Es una Asociación de 157 familias productoras de café Café arabigo de altura cultivado bajo sombra La mayor parte de nuestro café es producido por sobre los 1500 metros sobre el nivel del mar, lo que le otorga una excelente calidad organoléptica, intensa acidez, muy agradable sabor, exquisito aroma y buen cuerpo. Las fincas de nuestros socios están ubicadas desde los 600 msnm a los 2100 msnm. La cuenca del rio Intag ha sido cafetalera desde hace más de un siglo, y ahora, esa tradición se renueva en más de 134 hectáreas actualmente cultivadas orgánicamente. Una vez cosechadas las cerezas, inicia la fase de beneficiado y procesamiento, las que cumplimos bajo parámetros para la obtención de cafés especiales. El primer paso es la separación manual de granos defectuosos. A continuación se procede a despulpar el grano -liberarlo de su cáscara y pulpa recubridoras-. Resultado del beneficiado húmedo es el café pergamino, todavía recubierto por mucílago. Éste debe pasar por un tiempo de fermentación. Posteriormente se seca el grano en tendales o marquesinas solares. Una vez que el grano se ha secado se quita el pergamino por medio de una máquina trilladora, de donde obtenemos el café oro, mimsmo que en esta etapa es seleccionado en diferentes calidades según su color, imperfecciones y tamaño. Finalmente llevamos a cabo el procesamiento que consiste en tostar y moler la pepa de cafè oro, y embalar en su presentación final: café tostado y molido y café tostado en grano, en empaque interno hermético y como cobertura externa una funda tejida en fibra natural de cabuya (Furcrea incana), elaborada a mano por mujeres de la zona.
